Chicken Quesadillas with Mmmm... Bacon Shredded Cheese

Ingredients

For the Quesadillas 

  • 2 tbsp olive oil, divided 
  • 1 lb boneless chicken breast, sliced into thin strips 
  • Zest of 1 lime, grated on a microplane 
  • 4 garlic cloves, minced 
  • 1 large bell pepper, thinly sliced 
  • 1 small red onion, thinly sliced 
  • 4 cups Armstrong Mmmm…Bacon Shredded Cheese
  • 4 medium tortillas 
  • Sea salt and cracked black pepper 

For the Spiked Sour Cream

  • 1 cup sour cream 
  • ½ tsp chili powder 
  • 2 tbsp fresh squeezed lime juice 
  • Pinch of sea salt 

To Serve 

 

Directions

  1. Heat a skillet over medium heat. 
  2. Toss the sliced chicken breast with lime zest, and a generous pinch of salt and pepper. 
  3. Add 1 tbsp of the oil to the pan, then add your chicken breast and cook until golden, crisp, and cooked through (about 8 - 10 minutes). When there is 45 seconds remaining in the cook time, add your minced garlic and toss well to coat the chicken. Remove and set aside. 
  4. Add the remaining oil to the pan, then add your sliced red pepper and onion, season with a pinch of salt, and cook until the veggies are softened, about 5 minutes. Remove, then toss together with the chicken. Wipe the skillet clean with paper towels, then place back on the stove over medium heat. 
  5. Working one at a time, build the quesadillas by topping half of each tortilla with a generous portion of Armstrong Mmmm… Bacon shredded cheese, your garlicky chicken & veggie mixture, and more cheese, then fold in half and transfer to the preheated skillet. Cook, flipping once, until the tortillas are golden and the cheese has melted, about 3 minutes per side. Carry on preparing the remaining quesadillas. 
  6. Cut into wedges, then serve with a side of your favourite Armstrong NIBBLERS Natural Cheese Snacks, your spiked sour cream, salsa, lime wedges, and a garnish of fresh cilantro. Delicious!
