Scones with Old Cheddar Cheese, Sausage, and Rosemary

Ingredients

  • 500 mL (2 cups) all-purpose flour
  • 15 mL (1 tbsp) yeast (baking powder)
  • 15 mL (1 tbsp) sugar
  • 125 mL (½ cup) unsalted butter, diced
  • 180 mL (3/4 cup) 15% cream
  • 5 mL (1 tsp) fresh rosemary, chopped
  • 1 green onion, cut into thin rings
  • 125 mL (½ cup) dried sausage, diced
  • 100 g (1 cup) Armstrong Old Cheddar Cheese, diced

Directions

  1. Preheat the oven to 200º C (400º F).
  2. In a bowl, mix the flour with the chemical yeast and sugar.
  3. Add the butter and, using a pastry blender (or a fork), mix until a grainy texture is obtained.
  4. Add the cream, rosemary, green onion, dried sausage, and Armstrong Old Cheddar Cheese, mixing with your hands and forming a ball.
  5. On a floured work surface, roll out the dough to a 1-inch (2.5 cm) thickness and cut into 8 points (or make circles 3 inches /8 cm in diameter using a cookie cutter).
  6. Place the scones on a cookie sheet lined with parchment paper. Cook on the middle oven rack for 18 minutes or until the scones are golden.
